Pauls bbq sauce.
1 #10 can Ketchup (Heinz) approx. 12 cups
1 #10 can of water
3 heaping tsp. dry mustard
2 heaping tsp. cayenne pepper
40 dashes (good flowing dashes) Worcesterhire sauce
2 tbs. salt
1 tss. black pepper
1 cup (8oz.) liquid mustard
2 cups brown sugar
2 cups white vinegar ( dark is ok too)
Mix all ingredients togehter in a large pan and cook over med-low heat for 2-3 hrs. This makes approx 1.5 gallons of medium hot sauce. In some batches I have added some liquid smoke for some added smoke flavor. Take this out of the fridge a few hrs before you are ready to use it and heat on the stove to thicken .
The Dry Rub
I use equal amounts of the following ingred.
Cumin
Paprika
Granulated Onion
Garlic Powder
Chili Powder *You may want to use a little less of this to decrease the temp.
Brown Sugar
2 TBS Kosher Salt
1 TBS Cayenne pepper, * use according to taste.
I also add some.
Ground Coriandor
Cilantro Leaves

4'x6' grill with a water tray and an offset woodstove to heat it. The whole thing is mounted on a trailer. The 2x4's slide through loops I welded onto the grill, so when the pig is done, the whole grill can be picked up and removed with 4 guys.
That's a 180 lb sow on there with room to spare. It took 18 hours to cook and fell apart in your hands.
Mmmmmmmmmmmmmmmmm. Can't beat a pig roast!
