1 teaspoon black pepper
1/2 cup sliced mushrooms
1 medium tomato seeded and chopped
1/2 cup thin sliced mild onion
i added one med. red bell pepper, but it has to be saute`d till softened

preheat oven to 325*f

cook sausage in frying pan till no longer pink, crumble into not to small peices.
next, in a bowl mix eggs, mustard, salt. in a buttered 9x13x2 deep baking dish, layer the bottom with half the bread, half sausage, half the cheese, half the veggies, sprinkle with half the pepper. repeat layering with the remaining ingredients. bake uncover approx. 60 mins. or untill eggs are set. if top browns to quickly cover with foil. serve with engish muffins.
