Ingredients:

Potatoes
Chicken Broth
Butter
Onions
Garlic
Sour Cream
White Peper
Salt
Heavy Cream
Milk

Ok, this is a wing it type recipe, if you are any kind of cook at all you can adjust the ingredients to suit your taste. Other ingredients can be added if you want, for instance, peas add an interesting twist to it.

Peel and cut up a few potatoes. For our family of four, I use 5 or 6 medium sized potatoes. Put in a stock pot and cover with chicken broth. Bring to a boil, then turn down heat, cooking until the potatoes are soft enough to roughly mash, leaving some chunks for texture.

In the mean time, Put a stick of butter in a saute pan and melt it while you are cutting up a large onion into small, bite sized chunks. Peel and crack a few cloves of garlic. You can then slice or crush the garlic (I crush). Saute onions and garlic together on low to medium heat until the onions are carmalized, but not too soft.

When the potaoes are done, you will not have to drain any liquid because you didn't use any more broth than needed to cover. Mash up to suit your taste. I leave some smaller chunks. Put in about a half to a full cup of heavy cream and a few good dolups of sour cream and stir it up good. Then dump in your saute mix, butter and all. Stir in some white pepper and maybe some salt if you want. If the soup is too thick, add some milk to suit your taste. Top with croutons that you made yourself or purchased. A little sprinkle of ginger adds an interesting oder and a little color (don't over do)!

This will become a family favorite, but it is pretty rich, which is probably why we like it so much

Made it at work last night for dinner. BIG HIT THERE! The only difference was we made it the same, but then each guy added crumbled bacon, shredded cheddar cheese, and scallions on top of their bowl of it. Turned out AWESOME!

I use a large picnic ham sa my base let it cook all day take out debone and take off fat. Shred ham then cover with soup. Large batch in a 20 quart cooker 10 lbs potato's milk and flour to thicken etc. stirthepot.gif

Top off with a little fresh chopped chives.....dollap of sour cream! :beer2:
