i was wondering if i can run high altitude heads here in MN? otherwise anyone have a set of stock 800 ves heads?

That depends. Some of them you can run race gas at low altitude and some might not even keep your motor safe at low elevation with race gas.

Hot Seat's website says:

104 octane for the 5000+ ft. heads
112 octane for the 9000+ ft. heads.

Make sure what domes they are.

Under no circumstances should you ride it without the recommended gas.

ya, I'm thinking that'll just buy another set from hotseat for riding here in MN

i was just looking at their site, couldn't i buy just the domes and change them out?

ok, so i ordered the domes what is the best way to go at changing them out? also for riding at sea level, what clip should the carb be set at, what would be a good jetting set up?

Sorry, ain't got any tips for ya to take off the heads. Just follow the instructions in the service manual. I don't have any experience tuning RMK's with high compression heads and twin pipes but I'm guessing at sea level you're gonna want to start somewhere around 490 main jets and #4 on the needle clip to be safe. I bet you'll end up at 470 main jets and #3 or #3.5 on the needle clip. Keep an eye on the plugs and piston wash.
