Thought never crossed my mind till now. I'm borrowing one of these for a trip in the next few days (the driving part of it anyway).
I'm sure you could load topo maps and trail maps. Also there is a feature called 'off road' on the City Maps that turns off the voice nav and routing. Would be nice to use something like this to find gas and food. Thought I might carry it along with me on the sled and see how it works.
Also wondering how the touch screen holds up in the cold weather.
Seems pretty easy to use ... although I think I would lose the 'track logging' feature.
Any thoughts on this ?

Very easy to use and I love it on road trips!!!
Don't think the screen would hold up in the cold... Moisture could get in the back speaker or the SD slot. I have one and thought about it but I don't think it would be worth it.

My Zumo has the touch screen. It worked flawlessly this last week in the U.P. Temps got down to -11deg. Touch screen worked great. The Zumo is designed for motorcycles, so it's waterproof. Love It.

Have a surprising number of guys running the Nuvi on their sleds with no problems. Those units are not waterproof (unlike the Zumo, which was designed to be outdoors/unsheltered) so keep that in mind.

I'd keep it in a pocket so snow dust and moisture didn't get in and keep the screen warm. Just fire it up when you need it. You're correct that it doesn't save a track log anyway but could still be useful in pointing you in the direction for food or fuel. They sure get a fix fast SIRFIII chip set!

I have the Nuvi 260 and use the suction cup mount that it came with, on the inside of my windshield. Haven't had alot of time with it, maybe 300 miles, but no problems so far. Screen has been holding up just fine. Touch still works. When there is moisture in the air (snodust, rain, snow, etc.), I simply put a sandwich bag over it and can still read the screen through the bag. I have a small bungie cord I put around the mount just in case it loses suction on some of the big hits, but haven't lost it yet. The battery does seem to give out pretty quick, so I just plug it into my power outlet and I am good to go. Need to figure out how to keep the adapter in the outlet though. No track log as others have stated, but I have trail maps of Michigan on the SD card from a "company" (don't know if it is ok to put their name in this post), and it can get me to gas, food, lodging or whatever. You could always just leave it in your pocket, it will still get a signal. Then just take it out when you need it. That's probably a better idea, since you are borrowing it anyway. I should try to get some pictures so you folks on here can see it. Good luck!
