I see people talk about adjusting clickers in the primary clutch all the time. How do you do this? I've searched and can't find a single thing about it. I have a 97 mxz 583, do I even have clickers?

Although I am not familiar with your sled, I beleive the 'clicker' is the same.
The clickers are the bolts (3) that are on the center part of the clutch. You loosen the nut just enough for the bolt head to come out of it's counter-sunk hex hole. Then turn them to the next higher or lower number depending on if you want a higher top rpm or a lower top rpm.
The clicker is adjusting the limit of the tra arm in my case, I'm not sure about your's, maybe the limit for the weights if you have them.
For example, on my sled ('02 800R Summit X), the stock position is number 1 and it's top rpm is 7950. I changed mine to position 2 and now I can reach a tad over 8000 rpm. I think one position is supposed to let your engine acheive another 200 rpm, if everything else allows (pipes, jetting, driven clutch's helix, etc).
