2lbs stewing beef
1/4 cup-2fl oz of olive oil ( 1 ) Trim the meat of any fat and sinew, heat the oil on medium in a large frying pan and add the onions and stir for 5 min
1- 1/2lbs pearl onions (baby onions )
3 garlic cloves-cut in half length wise or until golden, remove from pan and drain on paper towel.
1/2 cup red wine
1 cinnamon stick ( 2 ) Add the meat all at once to the pan and stir over high heat for 10min or until well browned and almost all of the
4 cloves
1 bay leaf liquid has been absorbed
1 tbsp red wine vinegar
2 tbsp tomato paste ( 3 ) Add the garlic,wine,spices,bay leaf,vinegar,tomato paste. 1/4 teaspoon cracked blk pepper,some salt and 1-1/2
2 tbsp currants
cups water to the pan and bring to a boil. Reduce the heat,cover and simmer for 1hr stirring occasionally.

( 4 ) Add the onions,currants and stir gently. simmer covered for an additional 15-30min. Discard the cinnamon

stck before serving. Serve with crusty bread

Note! Replace the water with 1-1/2 cups beef stock or 1 cup of wine and 1 cup of water.
