I tossed around the idea of upgrading my '94 XLT from a 136" rear track to a 144", and then figured why not just jump to a 151". Is that too large a track for a piped (SLP) XLT engine to pull if the clutch is set up properly?

It is a lot of track, but with the correct gearing, and clutching, it will be ok. Just don't expect it to be a top end machine. Gear it for a realistic top end, I would say about 80-85. Try to put the lightest one on that you can. 1.5" is as deep a lug that will fit without some fairly major mods.
