thanksgiving leftover bird any good soup ideas

fill pot with 1.25 gallons of water. chop 4 oz carrot 4 oz celery 8 oz onion large cuts and put in water. strip carcass of meat and throw remaining bones and cartilage in with water. 1 bay leaf, 5-10 whole peppercorns. bring to simmer and cook uncovered for about 2-3 hours (should be barely any movement at the top) skim fat periodically. remove carcass and discard. strain veg, pcorns and bayleaf out. add egg noodles and whatever else u want in the soup about 7 minutes before service. shred meat and add that to the stock also. peas, corn, rice, frozen pre-sliced carrots, anything that u want. after all ingredients have been introduced, add salt to taste. serve with some fine grated parmesan and some crusty bread.
