i make this all the time... use differnet meats each time and add some different stuff.. its great on fall days or come in to a hot crock of it after riding all day

2 large cans diced tomatoes
1 large can dark red kidney beans
1 packet "hot" chili seasoning
2 fresh cut habenero peppers - thin sliced but leave the seeds in
handful chopped scallions
snow pea's or green beans (fresh) - handful
splash of tabasco

get all this in there and mix it up so your seasoning doesnt get clumpy - turn on high while cutting your meats up

now for the meats.... i use a few different combo's but almost anything rocks!

1 lb ground lean hamburg
2 links sliced chourico
2 links sliced linguisa
1/2 lb sliced sirloin tips


or


1 lb ground venison
1 lb sliced kielbasa
1/2 lb sliced elk sirloin
1 lb sliced chicken sausage ( your choice of flavor)
as it cooks season to taste with black pepper, onion powder or garlic powder
the difference in the meats all cooking together in the chili base makes for a filling bowl of "goolash"!

i put it in the crock in the early morning.. after a couple hours on high skim out any grease from the meat and mix it well.... turn it down to low and good to go all day... stir it if you want but if your out riding it will be frigin yummy when you get back - and dont forget the shredded cheese on top

one full crock feeds our whole riding crew... 6-8 hungry mofo's !!!!!

Here's one of my fav's.

2lbs. Sirloin tips cut in chunks
1lb baby white potatoes
1lb baby red " "
1 diced onion
2 habaneros diced
5 garlic cloves
1 lb diced carrots
2 cups water
1cup white wine
6-8 beef bullion's
fresh parsley & oregano.
Salt and fresh pepper
2 tbs Chile powder
1 tsp cayne pepper

I just coat the sirloin with flour and suttee, then add every thing else!
Simple and hearty stew! You can also substitue the sirloin with hot sausage! Just add some white beans too.
