Make small meatballs ( about 1" round ) do not fry them ! Place them in pot with chiken broth add lots of fresh garlic when meatballs are cooked thruout , add escarole ( can be substituted with spinach ) In a seperate pot cook orzo when complete , mix together in serving bowls ( do not add orzo to soup untill you want to eat it as it will get too soft if left for extwended time.
